Low Fat Beef Stroganoff--------

This is an old family beef stroganoff recipe that has always been a favorite. Over the years we have remedied it to a low fat beef stroganoff version as we became more aware of health issues. The first recipe is just as it was back in the sixties, the second is a bit more healthy and you can see where we used other ingredients to cut out a lot of calories without losing much in the way of flavor.
- 2 pounds beef chuck roast / all fat and gristle removed
- ½ cup butter
- ½ pound fresh mushrooms
- ¼ cup chopped onion
- ¼ cup sliced almonds
- 1 clove garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 2 (10.5 oz) beef consume
- 8 oz medium cooked egg noodles
- 1/3 cup sour cream
- Pepper to taste
Melt butter with medium heat in large skillet or Dutch oven.
Cut beef into strips (maybe 2 inches long, about ½ inch thick), season with pepper, place in butter. Brown meat quickly and remove with slotted spoon trying to leave as much butter in the pan as possible, set to the side.
Turn heat to low and add mushrooms, onion, almonds and garlic; simmer 10 minutes. Stir in flour, add lemon juice and beef consume. Return beef to skillet and simmer covered for one hour, until beef is tender.
Boil noodles, drain and add to skillet.
Stir in sour cream.
Low Fat Beef Stroganoff
Use ½ cup olive oil instead of butter.
We must get away from saturated fats. Extra virgin olive oil is the purest and has antioxident properties. It lowers cholesterol levels because it is not an animal fat. Extra virgin olive oil builds a healthy balance between the omega 3 and omega 6 levels.
Use 8 ounces fat free noodles instead of egg noodles.
There are many choices, but one that tastes great is the shirataki noodle. They have nearly no carbs or calories, shirataki noodles are almost all fiber and water.
Use 1/3 cup fat free yogurt and 1/3 teaspoon baking soda (mixed), instead of sour cream.
Sour cream is very high in saturated fat, this mixture is agreeable.
Just these few adjustments make a low fat beef stroganoff that we enjoy. This can easily be made as a side dish by omitting the beef and using only one can of beef consume, and 4 ounces noodles.
