Crockpot Beef Stroganoff--------

 
Omaha Steaks Beef Stroganoff With Noodles

Beef stroganoff has always been a favorite meal, but most beef stroganoff recipes are complicated and take a long time to make.

This version is easy to throw together, even for a busy mom.

Ingredients:

  • 1-2 Pounds Beef tips or Stewing Beef (you can substitute any type of beef you have on hand, just cut it into large chunks) (If you stay away from red meat you can also substitute chicken or turkey chunks)
  • 1- 2 cans beef broth
  • 1 Packet french onion soup mix with mushrooms
  • 1-2 cups white button mushrooms
    (although it is not traditional in beef stroganoff you can add any other vegetables that your family loves to make this meal even more nutritious)
  • 1-2 Tablespoons cornstarch
  • 1 pound wide egg noodles
  • Sour Cream (optional)

Put the beef tips in the crock pot, then sprinkle the soup mix over the top of them. Pour the beef broth over the beef until the meat it just covered. Cut the mushrooms into large chunks, then place them all around the meat. If you are adding any other vegetables now is the time to add them. Make sure you cut all the vegetables into similar sized chunks.

If you are rushed in the morning you can prepare this the night before, put in in the refrigerator then just put it in the crock pot in the morning. If you have done this the night before now is when you put it in the fridge.

In the morning turn the crock pot on and cook for 4 hours on high, or 6-8 hours on low. You will know it is done when the meat is tender and shreds easily. Take one cup of cooking liquid out of the pot and mix with the 1-2 tablespoons of cornstarch. Once the cornstarch is dissolved mix the liquid back into the crock pot, let stand a few minutes while the sauce thickens.

While the meat is cooking cook the package of wide egg noodles according to the package directions.

To serve the beef stroganoff, place a layer of noodles on the plate then top with the meat mixture. Top with Sour cream.
