Beef Stroganoff is a classic Russian recipe that can be dated back to its first known publishing in a classic Russian cookbook in 1861. Although named after Count Pavel Stroganov, a famous 19th century chef. Beef Stroganoff was never originally created by the gourmet chef and easily dates to before his time.

Traditionally the Russian dish consisted of sautéed strips of lean beef served in a sour cream sauce, usually prepared with onions and mushrooms. Considered a staple food of the time, Beef Stroganoff was popular because of its simple ingredients and ability to be easily made in vast quantities.

Modern day versions of the Beef Stroganoff sauce consist of many variations of the original recipe. Two typically consumed versions of the sauce consist of either a tomato or cream sauce, sour cream being its main flavoring served over noodles or rice.

Tomato based Stroganoff sauces are usually prepared by the addition of tomatoes and/or tomato paste to a sour cream sauce. A common tomato sauce is prepared with several basic ingredients being: tomato paste, sour cream, flour, cream of mushroom soup, sliced mushrooms, Worcestershire sauce, and onion amongst other ingredients. The flour is used as a base thickener for the sauce to give it a thick consistency which allows for gravy like appearance. Depending on the amount of flour used, the thickness can vary. Although most Beef Stroganoff sauce recipes are prepared with flour, not all require it.

Commonly prepared cream sauce Stroganoff uses sour cream as the basic flavoring of the dish. Although many variations in this recipe are abounding, a basic list of ingredients may include: beef broth or stock, flour, onion, garlic, mushrooms, butter, and sour cream. Many variations include an array of herbs and spices ranging from, ground pepper, dry mustard, and curry which are used to compliment the beef.

Although there are a countless number of variations out there, Beef Stroganoff sauces are easy to prepare and delicious too.

It seems that throughout the years many families have added their own special touch to the sauces, so as you can imagine there are hundreds of variations of the recipe to choose from.
